Truffle Burger – Gourmet Flavor with a Cheesy Twist

To make this like at American Diner Andra in Tokyo, you'll need a screaming hot fajita pan. But even without all the bubbling drama, the cheese sauce was so good, it'll still be delicious for just straight dipping.

Makes 2

Ingredients

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 2 cups milk
  • 8 ounces cheddar cheese, shredded (I used truffle cheddar and it was insane)
  • 4 ounces cream cheese
  • 1/2 teaspoon garlic powder
  • Kosher salt & coarse ground black pepper

Burgers

  • 1/4 cup mayo
  • 2 tablespoons ketchup
  • 2 tablespoons sweet relish
  • Neutral oil
  • 1 pound ground beef, separated into 4 balls
  • 4 slices American cheese
  • Kosher salt & coarse ground black pepper
  • 2 brioche buns

Directions

Cheese Sauce

  1. Put butter in a pot over medium heat, and when melted sprinkle with the flour and whisk until smooth
  2. Add the milk a little at a time, whisking well after each addition to keep it smooth
  3. Once the milk is in, start adding the cheese, also a little at a time and whisking well, then the cream cheese the same way
  4. Add the garlic powder, and season to taste with salt & pepper - keep warm

Burgers

  1. If using, put the fajita pan on a burner over high heat
  2. Combine mayo, ketchup & relish - mix well and set aside
  3. Heat flattop, add some oil and flatten the beef balls, season only the tops with salt & pepper
  4. Add buns to flattop and toast
  5. When the patties are cooked on one side, flip and add a slice of cheese to each - when melted remove and build: bun, sauce, patties, bun, then cut in half
  6. Remove fajita pan from heat, place on it's base, add a couple ladles of cheese sauce (careful it'll start bubbling and steam right away) then place the burger, cut side down on the cheese
  7. Stand back, admire your work and wait for the bubbling to slow before attempting a bite
