The Perfect Deli Roast Beef

Whether you smoke this, or cook it in the oven the result will be that beautifully pink, super tender stuff you get from the deli counter. And the best part is you start with an inexpensive eye of round - which is July of 2024 can be found for less than $5 a pound.

As much as you'd like

Ingredients

  • One 4-5 pound eye of round roast
  • 1/4 cup mayo
  • 3 tablespoons yellow mustard
  • 3 tablespoons soy paste
  • Kosher salt & coarse ground black pepper

Directions

  1. Heat smoker or oven to 275
  2. Remove roast from fridge about 30 minutes before cooking, dry off then then slice off any silver-skin or extra fatty parts (some fat is ok)
  3. Put mayo, mustard and soy paste in a small bowl, and mix well to combine
  4. Season well with salt & pepper, then rub all over with mayo mixture
  5. Put on the smoker or in the oven- cook to an internal temp of 123-125 then remove
  6. Your goal is to slice it thinly, so if you want it now, loosely cover with foil 20-30 minutes before you do
  7. Or loosely cover with foil until room temp, then wrap tightly with foil or cling film and refrigerate overnight - it'll slice much easier the next day
