The Amazing Pork Steak

Say goodbye to the pork chop and hello to the pork steak (a thick steak cut from the pork shoulder). Here's why I like this: it's delicious, simple and quick because even though you're using pork shoulder it's not a long, slow cook - you're on the grill and off in under 15 minutes.

Makes one

Ingredients

  • One pork steak, approximately 1.5 inches thick
  • Kosher salt & coarse ground black pepper
  • 1/2 cup bbq sauce
  • 2 tablespoons sriracha
  • 1/3 cup beer

Directions

  1. Season steak(s) liberally with salt & pepper about 30 minutes before grilling
  2. Combine bbq sauce, sriracha and beer - mix to combine
  3. Heat grill to medium/high
  4. Spray or oil grill, and put on steak
  5. Cook, turning often until beginning to color beautifully on both sides - now you can begin brushing with the sauce
  6. Your goal now is to cook it until 140-142 degrees, then remove and cover loosely with foil for 10 minutes - the temp will continue to rise to about 145
