Sweet Potato Pie
Makes one 9 inch pie - Sweet potato pie rules.

Ingredients
One 9 inch pie crust
1.5 pounds sweet potatoes
3 eggs, lightly beaten
5 ounces evaporated milk
1 teaspoon each ground cinnamon, ginger and all spice
1/4 teaspoon nutmeg
1 cup brown sugar, firmly packed
1 teaspoon vanilla
Directions
Heat oven to 350 and pre-bake pie crust about 10 minutes, allow to cool
Turn oven to 425
Peel potatoes, cut into equal size pieces and boil until soft enough to poke a skewer through them - 15 to 20 minutes
Drain and then mash
Add remaining ingredients to potatoes and mix well
Pour into pie crust and bake at 425 for 5 minutes then turn down too 325 and finished baking for an additional 40 minutes
Allow to cool and then serve
