Super Puffy Omelet

We had to make this to see if was legit or sxxt - and it's totally legit. Thank you Haeum Cooking for the inspiration!

Makes one amazingly puffy omelet

Ingredients

  • 3 eggs
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • Butter

Directions

  1. Separate eggs into 2 bowls - whites in one and yolks in the other
  2. Add the salt to the yolks, and beat until smooth
  3. Beat or whisk the whites until frothy, then add the sugar and continue beating until stiff peaks form
  4. Gently fold the yolk mixture into the whites (see the video) until uniformly combined
  5. Melt a tablespoon of butter over low heat in an 8 inch non-stick pan, and add the egg mixture, gently smooth out across the bottom
  6. Cover, and cook on low until the bottom starts to brown - 3-5 minutes
  7. Fold one half over the other, and cook the sides a little
  8. Done
