Sriracha Garlic Butter Turkey

Sriracha Garlic Butter Turkey

Ingredients

  • One 12-14 pound turkey, spatchcocked (how-to here) & brined (how-to here)
  • 2 cups softened butter
  • 1/2 cup sriracha
  • 5 cloves garlic
  • 3 tablespoons honey

Directions

  1. Remove turkey from fridge 2 hours before cooking
  2. Preheat oven to 425
  3. Combine butter, sriracha, garlic and honey in a bowl and mix well - put 1/3 of the mixture in a small pot over low heat
  4. Once melted, let cool slightly then using a cooking syringe, inject the melted butter intomultiple spots in the breasts, thighs and legs
  5. Dry the turkey well, then rub the remaining softened butter on both sides, mostly concentrating on the skin side
  6. Cook until an instant read thermometer reaches 165 degrees in the thickest part of the breast - if it starts to get dark in spots, use pieces of foil to cover them
