These are small, rolled up beefy Italian packages of love.

Serves 4-6

Ingredients

  • One 2 pound eye of round
  • Kosher salt and coarse ground black pepper
  • Olive oil
  • 2 cups seasoned Italian breadcrumbs, or see below to make your own
  • Oil for cooking
  • Italian Dipping Sauce, recipe here

Homemade Italian Breadcrumbs

  • 2 cups panko bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon parsley
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon oregano
  • 1 teaspoon basil

Put into a processor, and whiz about 10 seconds - use

Directions

  1. Put the beef in the freezer 30-40 minutes - you want it firm for cutting
  2. Use a slicer to slice pieces quite thin, like no more than 1/8 inch thick if possible. Or if using a knife, safely cut to the thinness you're comfortable with, then pound to approximately ⅛ inch thick, and roughly 2 inches wide x 4 to 6 inches long
  3. Make breadcrumbs if not using store bought, and put on a plate - with a few tablespoons of olive oil on another plate
  4. Season slices with salt & pepper, lightly oil both sides, then dredge in the breadcrumbs - roll up and skewer
  5. Heat neutral oil on a flat griddle, and cook the spiedini until golden brown all the way around
  6. Serve with the dipping sauce
