Spicy Sausage Mushroom Pizza

Spicy Sausage Mushroom Pizza

I make this on our flat griddle, but you could easily make it in the oven on sheet pan - and if you do, no need to flip it.

Makes one pizza

Ingredients

  • 2 links Italian spicy sausage, uncooked
  • 6 ounces mixed mushrooms, stems removed and sliced
  • One store bought 17x10 pizza dough, from the refrigerator section
  • 1/3 cup pesto
  • 5 ounces shredded mozzarella cheese
  • Grated Parmesan, olive oil, black pepper and chopped parsley for garnish

Directions

  1. Heat grill pan over medium heat, and brush lightly with oil
  2. Remove casing from sausage, and break off small pieces of it and put on the pan, cook until just done then remove
  3. Add the mushrooms and cook until nicely softened and just beginning to brown - remove
  4. Turn the heat down to medium, add a little more oil, then unroll the dough onto the pan - cook until just beginning to brown on the bottom, lightly oil the top and flip over
  5. Spread pesto on the now cooked top side, top with the mozzarella, then scatter on the sausage & mushrooms and cook until cheese is melty and the bottom crispy
  6. Remove, and add some parmesan, olive oil, a few good grinds of pepper and the parsley
  7. Cut & enjoy!
