Spicy California Skirt
I know, a burger 'skirt' sounds ridiculous. But not only is it delicious, but also adds a crazy textural component - and I really like that. Plus, we made this for National Cheeseburger Day - and it seems so right.
Two 4 ounce balls of ground beef, if possible equal parts chuck,short rib and brisket, trust me
1 slice American cheese
1 cup shredded cheddar cheese
Directions
Combine guacamole ingredients in a small bowl, mix well to combine - set aside
Combine aioli ingredients in a small bowl, mix well to combine - set aside
Heat flattop or pan, add a small amount of oil and the peppers and onions - cook until softened and beginning to brown - set aside
Add a little more oil, and the ground beef, flatten then season with salt & pepper
When the first side is done, flip over and add the slice of American to one of them
Then put the shredded cheese on the flattop in a circle about an inch wider than the patties, put an ice cube or 2 beside the cheese, the cap with a pot lid
Let the cheese skirt go about a minute, remove the lid and using a thin spatula, start slowly pushing under and lifting (watch the video)
Now you can build: bottom bun, aioli, guacamole, cheese skirt, patty without cheese, patty with cheese, veggies, top bun.
