Spam Silog

Breakfast is hands-down my favorite meal of the day, and this Filipino version is easily in my top 5 of all time. The ‘silog’ garlic rice is so great by itself, but addition of the salty/crispy Spam with the eggs takes it over the top.

Serves 2

Ingredients

  • 1/4 cup chopped garlic, about 12 cloves
  • 1/4 cup neutral oil
  • 3 cups cooked, cold rice, or 2 day pre-cooked rice packs like these
  • 1 tablespoon butter
  • 4 slices Spam, about 1/4 inch thick each
  • 2 eggs
  • Green onion, chopped for garnish

Directions

  1. Put oil in a large pan over medium heat, and when hot (not smoking) add the chopped garlic
  2. Cook, stirring often until it's golden brown, this shouldn't take long. But it can go from perfect to fxxcked in a couple seconds, so stay close
  3. As soon as it's there, strain out the garlic bits - but saving the oil
  4. Turn the heat to medium high, add a couple tablespoons of the reserved garlic oil to the pan, and when hot (this time almost smoking) add the rice
  5. Your goal over the next couple minutes is to stir and toss the rice in the oil, breaking it up as you do to separate the grains - and if it gets a little crispy, so much the better
  6. Add the butter and most of the garlic bits, (hold some back for plating), stirring everything well - set aside and keep warm
  7. Make diagonal cuts on each side of the Spam slices, and add to the pan with a bit more of the garlic oil
  8. Cook until golden brown, then flip over and push to one side. Add a bit more oil, then the eggs - cook them anyway you like, but if they don't have a runny yolk...
  9. When the Spam is golden on both sides, you can plate: rice, Spam, eggs, some of the reserved crispy garlic and finally the green onion
