Smoked Meatball Tacos
Makes about 10 tacos

Ingredients
Meatballs
1 pound ground beef
1/2 yellow onion, diced fine
3/4 cup panko bread crumbs
1/3 cup finely chopped cilantro
1 teaspoon chipotle chili powder
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon kosher salt
2 tablespoons soy, or soy paste if you have
1 egg
Tortillas
Diced white onion and cilantro for serving
Pickled Jalapeno Ranch
1/4 cup mayo
1/4 cup sour cream
1/4 cup buttermilk
1/4 cup finely chopped pickled jalapeno
2 tablespoons pickled jalapeno juice
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
3 tablespoons chopped cilantro
1.5 tablespoons ranch seasoning powder
Kosher salt & pepper to taste
Directions
Preheat smoker or oven to 275
Put all meatball ingredients in a large bowl, and mix well to combine
Roll into 32 meatballs, and put on a wire rack, or baking sheet if baking
Smoke or bake until an instant read thermometer shows 160 degrees, remove
While they cook, combine all ranch ingredients in a bowl and mix well, set aside
Heat tortillas, add some ranch, 3 meatballs to each, then drizzle with more ranch and top with some onion and cilantro
