Smoked Meatball Tacos

Smoked Meatball Tacos

Makes about 10 tacos

Ingredients

Meatballs

  • 1 pound ground beef
  • 1/2 yellow onion, diced fine
  • 3/4 cup panko bread crumbs
  • 1/3 cup finely chopped cilantro
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 2 tablespoons soy, or soy paste if you have
  • 1 egg
  • Tortillas
  • Diced white onion and cilantro for serving

Pickled Jalapeno Ranch

  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1/4 cup buttermilk
  • 1/4 cup finely chopped pickled jalapeno
  • 2 tablespoons pickled jalapeno juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 3 tablespoons chopped cilantro
  • 1.5 tablespoons ranch seasoning powder
  • Kosher salt & pepper to taste

Directions

  1. Preheat smoker or oven to 275
  2. Put all meatball ingredients in a large bowl, and mix well to combine
  3. Roll into 32 meatballs, and put on a wire rack, or baking sheet if baking
  4. Smoke or bake until an instant read thermometer shows 160 degrees, remove
  5. While they cook, combine all ranch ingredients in a bowl and mix well, set aside
  6. Heat tortillas, add some ranch, 3 meatballs to each, then drizzle with more ranch and top with some onion and cilantro
  7. Boom
