Smoked Loco Moco

Smoked Loco Moco

One of my favorite breakfasts anywhere, and certainly in Hawaii. And if you go, you MUST have it somewhere. If not, just make this one - cuz it'll prob be better anyway :)

Makes 2

Ingredients

Patties

  • 12 ounces ground beef
  • 2 tablespoons soy sauce
  • 1/4 teaspoon each Kosher salt, coarse ground black pepper and garlic powder
  • 2 eggs, cooked sunny side up
  • Diced green onion for garnish

Gravy

  • Neutral oil
  • 6 ounces sliced cremini mushrooms
  • 1/2 large yellow onion
  • 4 ounces sliced mushrooms
  • 1/2 yellow onion sliced
  • 2 cups beef stock or broth
  • 2 tablespoon cornstarch
  • 2 tablespoon soy sauce
  • 1 tablespoon A1
  • 1/4 teaspoon each kosher salt and pepper
  • ½ teaspoon garlic powder
  • 3 tablespoons cornstarch
  • 3 tablespoons water

Fried Rice

  • Oil
  • 1/4 any color onion, diced small
  • 3-4 ounces char siu (cooked Chinese bbq pork) or bacon, diced
  • 2 cups cold, cooked white rice
  • 2 tablespoons soy
  • 1 teaspoon sesame oil

Directions

Patties

  1. Preheat smoker to 325
  2. Combine ground beef, soy, salt, pepper & garlic powder, make into 2 patties, and put on the smoker, 30 minutes

Gravy

  1. While they smoke, heat 1 tablespoon of oil in a large skillet and add onions and mushrooms, cook until softened and beginning to caramelize, about 10 minutes
  2. Put in the broth and bring to a simmer, then add the soy, steak sauce, salt, pepper and garlic powder, mix well
  3. Mix corstarch & water until smooth, then add about 1/2 to the mushoom mix, stirring well - if it's as thick as you want, stop there. If not, add remaining cornstarch slurry - just keep warm

Fried Rice

  1. Heat a large pan, add a tablespoon of oil and when hot, put in the onion - if using bacon instead of char siu, add it now
  2. Cook until onion has softened and bacon is about 80 percent of the way there - if using char siu, cook the onion about 5minutes then stir in the pork, cook a couple minutes to warm through
  3. Turn up the heat, and add the rice, breaking up as you go - gice it a couple minutes to fry a heat through
  4. Add the soy and sesame oil, mix in well - set aside

Build

  1. Use a small bowl to shape rice into 2 mounds, then invert onto plates or just plate
  2. Top with a smoked patty, add some of the gravy and finally a few green onions to garnish
