Shredded Beef Sandwich

Less than 10 minutes active time, and about an hour of sitting on your hands yields these oh-so great sandwiches. And if you don't want a sandwich - throw it on some mashed potatoes. Because either way ur gonna be really happy in a hurry.

Ingredients

  • 3 to 4 pound chuck roast
  • Kosher salt & coarse ground black pepper
  • 1 cup beef stock
  • 1 cup dark beer
  • 1 envelope Lipton ‘Beefy Onion’ soup mix
  • 8 cloves garlic, peeled
  • Rolls or buns for serving
  • ¼ cup bbq sauce
  • 1.5 tablespoons yellow mustard
  • Provolone cheese
  • Potato chips

Directions

  1. Cut chuck roast into large, 2-3 inch pieces
  2. Season well with salt & pepper, and put into the pressure cooker with the stock, beer, soup mix and garlic – give a gentle mix
  3. Seal, set to high pressure for 50 minutes, and make sure top vent is turned to ‘pressure’
  4. While it does combine the bbq sauce and mustard
  5. When the 50 minutes is done, let the pressure release naturally
  6. To make a sandwich, toast bun, add some sauce, shredded beef and provolone (put under the broiler to melt the cheese if you like) top with chips and the top bun
