Savory French Toast

Savory French Toast

Makes 10-12 slices

Ingredients

Bread

  • 3 cups all purpose flour, sifted
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 pound, cooked crispy bacon, chopped (save a little for serving)
  • 2.5 cups shredded cheese, any kind (I used Monterey jack)
  • 12 ounces beer, any will work
  • 2 tablespoons butter melted

For the French Toasting part:

  • 2 eggs
  • 1/4 cup heavy cream or milk
  • 1 tablespoon Grand Marnier
  • Butter
  • Hot honey

Directions

Make the bread

  1. Preheat oven to 350 degrees
  2. In a large bowl combine flour, sugar, baking powder, salt, bacon and cheese - mix, then add the beer and stir until just combined
  3. Butter a 9x5 loaf pan, put in the batter, smooth the top as much as you can (it won't be perfect) then brush with the melted butter
  4. Bake for 50-60 minutes or until golden and a toothpick inserted comes out clean
  5. Let cool in the pan a few minutes, then remove and place on a wire rack to cool

Make the French Toast

  1. Beat eggs with cream in a wide bowl, then stir in the Grand Marnier if using
  2. Slice bread, and soak in the egg mixture a couple minutes
  3. Heat a large non stick pan over medium, add butter and when melted , put in the soaked bread
  4. Cook until golden on both sides, and serve topped with more butter, some reserved bacon and honey
