Mexican Omelet

I used raw veggies in this, but you easily could already cooked veggies from the day before if you want.

Serves 1-2

Ingredients

  • 1 avocado
  • Taco seasoning, recipe here
  • Kosher salt & coarse ground black pepper
  • 2 tablespoons avocado salsa, salsa verde or red salsa - any will work
  • 1/4 cup diced veggies: onion, peppers, mushrooms, eggplant, zucchini - really anything you like
  • 1/4 pound ground beef
  • 4 eggs, beaten (I used 3 in the video but 4 would have been better)
  • 2 slices American cheese
  • 1/3 cup refried beans, warmed up
  • 2 teaspoons adobo sauce (from a can of chipotle chilis)
  • Sour cream, diced tomato and cilantro for serving

Directions

  1. Peel avocado and put into a small bowl, add a teaspoon of the taco seasoning and the salsa - mash together and mix well to combine, set aside
  2. Heat flattop or non-stick pan with a tablespoon of oil, and when hot add the veggies - cook 3-4 minutes until beginning to soften
  3. Add a little more oil, then put the beef on the flattop, spread out, season well with the taco seasoning and let cook to get a bit of a crust
  4. Flip over, add the veggies and mix well - cook unti the beef is just done, then remove
  5. Use a little more oil if necessary, put on the eggs and spread them out to a large rectangle
  6. Top with the cheese, and let cook a minute or so until it begins to set, then put on the beef/veggies and top with refired beans
  7. Fold the sides over the top, and flip over to cook about a minute
  8. Remove to a plate and top with the guacamole, sour cream, tomato, cilantro and a wee bit more taco seasoning
  9. Happy eating
