Mashed Potato Mushroom & Tomato Pizza

Mashed Potato Mushroom & Tomato Pizza

Makes One 12 inch Pizza

Ingredients

  • One ball pizza dough
  • 1 cup mashed potatoes
  • 1/2 teaspoon truffle oil
  • 1 teaspoon garlic paste
  • Kosher salt & coarse ground black pepper
  • 1/2 cup cherry tomatoes
  • 4 ounces shiitake mushrooms
  • 3/4 cup shredded mozzarella
  • 1/4 cup grated parmesan
  • 1/3 cup ricotta cheese
  • One big handful baby arugula
  • Olive oil

Directions

  1. Remove dough from refrigerator 1-2 hours before cooking
  2. Combine mashed potatoes, truffle oil, garlic paste and salt & pepper (to taste) in a small pot and mix well over medium heat, set aside but keep warm
  3. Heat flat top to medium, add a little oil and put on the mushrooms in one section, and more oil and the tomatoes in another - cook about 5 minutes until mushrooms have softened nicely, and a little less until tomatoes start to blister - remove both
  4. Shape pizza dough into as close to a 12 inch circle as you can, and put on the flattop - cook until th bottom os beginning to brown, 2-3 minutes then remove
  5. Flip so the cooked side is facing up, onto a cornmeal sprinkled pizza peel and spread with the warmed potatoes, the mozzarella, the shiitakes and tomatoes
  6. Put back onto the flattop, until the cheese is melted and the bottom getting brown in spots - remove
  7. Sprinkle with Parmesan, scatter dollops (love that word) and finally toss arugula with a little olive oil and add to the top of the pizza
