While they cook, make tiny cross-hatch cuts on 2 sides of each dog, add about 1/2 tablespoon of oil to a pan and when hot...add the dogs - cook until beginning to brown and the cuts open up, remove to a plate and let cool
Wrap each dog with a piece of cheese, then completely encase in the cooled potatoes, put in the egg, the flour and finally coat with the panko
Heat oil to 350 degrees, and cook panko coated dogs until golden brown - 1.5 to 2 minutes
