Marry Me Tortellini
We jumped on the Marry Me wagon a while ago and did the Marry Me Chicken, andyes it was delicious. But this tortellini is well...sort of ridiculous - in a the most delicious way. It may not get you married, but could easily get you lxxd.
¼ pound bacon, diced (a good smokey one will be great here)
1 large chicken breast, about 16 ounces
Kosher salt
Coarse ground black pepper
2 teaspoons Italian seasoning
3 tablespoons flour
Olive oil
1 small onion, sliced
3 cloves garlic, minced
5 ounces jarred roasted red peppers, sliced
1 tablespoon tomato paste
2 cups chicken broth
20 oz fresh tortellini, I used spinach & ricotta
½ - 1 teaspoon red pepper flakes
1 cup heavy cream
1 cup Parmesan cheese
2 cups baby spinach
½ cup basil leaves
Directions
In a large pan, cook bacon until almost getting crispy - remove but leave in grease, as long as it's not more than about 2 tablespoons
While the bacon cooks, flatten the chicken to an even thickness, cut into bite sized pieces and put in a bowl with a good pinch of salt & pepper, half the Italian seasoning & 1 tablespoon of the flour, then mix well then put into the pan with the grease
Cook the chicken, turning the pieces to get color on all sides until cooked through, 4 to 5 minutes then remove
Add about a tablespoon of the oil and the onion - cook 3 to 4 minutes or until beginning to soften, then add the garlic and stir until fragrant
Stir in the tomato paste and red peppers, sprinkle with the flour and stir until it is fully mixed
Pour in the broth, stirring well and scraping along the bottom to get up anything stuck, and add the tortellini - mix in and let simmer about 5 minutes
Season with a good pinch of salt and pepper, the red pepper flakes and the remaining Italian seasoning, stir then add the cream - let simmer
Add the Parmesan a little a time, stirring as you until fully incorporated then add the spinach and basil mixing in well until fully wilted
Put in the chicken & bacon, let simmer and couple minutes and bingo - you're all done
