Korean UFO Chicken Burgers

We absolutely love these UFO burgers - and this Cripsy Korean chicken version might be my fav so far. If you don't have a machine, no prob, just make em normal. And if you want one, here's the one I use - it's not sponsored, but we love it and so far it's worked great.

Makes 4-6

Ingredients

Chicken

  • 4 chicken thighs, cut into bite sized pieces
  • 2 tablespoons Shaoxing wine or dry sherry or mirin or soy
  • ½ teaspoon garlic powder
  • ½ tsp cayenne
  • ½ tsp smoked paprika powder
  • Kosher salt & coarse ground black pepper
  • 1.5 cups or potato starch or flour
  • 1 large egg
  • Oil for frying
  • 4 – 6 large burger buns
  • 4 – 6 slices American cheese

Coleslaw

  • ¼ cup mayo
  • 1 tablespoon orean pepper paste) or chili paste
  • Juice of ½ lime
  • Kosher salt & coarse ground black pepper
  • 3 cups coleslaw

Directions

  1. Put chicken in a bowl with the Shaoxing, mix well and setaside 15 minutes
  2. In another bowl, combine the potato starch, garlic powder, cayenne,paprika and ½ teaspoon each salt & pepper – mix well
  3. After 15 minutes, put the chicken into the cornstarch, tossto mix, then add the egg and mix everything well to coat
  4. Heat oil to 350 degrees
  5. Cook the chicken in batches 4 minutes (don’t overcrowd) thenremove and let rest – cook remaining chicken
  6. When all the chicken has been initially fried, turn oil tempto 375 and cook another 4 minutes, then remove and let drain on paper towels slightly
  7. If using a UFO, preheat to 400, then build: bottom bun, slaw, chicken, cheese(melted a bit) top bun - close up and cook one minute, or
  8. If not using a UFO, toast buns, then build: bottom bun, slaw, chicken, cheese(melted a bit) top bun
  9. Eat and smile
