Jack in the Box Tacos

Feel free to disagree, but these ARE the JITB tacos, just better and easier because they're baked and not deep fried.

Makes 8-10 tacos

Ingredients

  • Neutral oil
  • 1/2 pound ground beef
  • 3 ounces boneless, skinless chicken thigh, diced small
  • 1/3 cup diced yellow onion
  • 1/3 cup canned pinto beans, plus some of the juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon kosher salt & 1/4 teaspoon coarse ground black pepper
  • Corn tortillas
  • American cheese slices, cut in half diagonally
  • Shredded iceberg lettuce
  • Hot sauce for serving

Directions

  1. Put 2 baking sheets in the oven and preheat to 450
  2. Heat a skillet over medium/high, add 1 tablespoon of oil and when hot put in the chicken, beef and onions - cook until the beef and chicken are no longer pink
  3. Add the garlic & chili powder, cumin and salt & pepper - mix in until fragrant, then remove from heat and let cool slightly
  4. Put the ground beef/chicken mixture into a processor, and add the pinto beans and a couple tablespoons of the juice from the can - process until smooth
  5. Sandwich a couple tortillas in a towel, microwave about a minute to soften, then put a couple tablespoons of the mixture in each one, fold in half and spray each side with non-stick spray
  6. Remove pans from oven and quickly place the folded tacos on the bottom pan, place the other pan on top and put back in the oven
  7. Cook 5 minutes or until crispy, remove, open carefully and add a triangle of cheese, some lettuce and hot sauce
