Jack in the Box Tacos
Feel free to disagree, but these ARE the JITB tacos, just better and easier because they're baked and not deep fried.
3 ounces boneless, skinless chicken thigh, diced small
1/3 cup diced yellow onion
1/3 cup canned pinto beans, plus some of the juice
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon kosher salt & 1/4 teaspoon coarse ground black pepper
Corn tortillas
American cheese slices, cut in half diagonally
Shredded iceberg lettuce
Hot sauce for serving
Directions
Put 2 baking sheets in the oven and preheat to 450
Heat a skillet over medium/high, add 1 tablespoon of oil and when hot put in the chicken, beef and onions - cook until the beef and chicken are no longer pink
Add the garlic & chili powder, cumin and salt & pepper - mix in until fragrant, then remove from heat and let cool slightly
Put the ground beef/chicken mixture into a processor, and add the pinto beans and a couple tablespoons of the juice from the can - process until smooth
Sandwich a couple tortillas in a towel, microwave about a minute to soften, then put a couple tablespoons of the mixture in each one, fold in half and spray each side with non-stick spray
Remove pans from oven and quickly place the folded tacos on the bottom pan, place the other pan on top and put back in the oven
Cook 5 minutes or until crispy, remove, open carefully and add a triangle of cheese, some lettuce and hot sauce
