3 Grilled Cheeses

3 Grilled Cheeses

Three grilled cheeses, all different and all delicious.

Makes one of each

Ingredients

Egg, Ham & Cheese

  • 1 hard boiled egg
  • 3 tablespoons mayo
  • 1 tablespoon diced green onion
  • Kosher salt & coarse ground black pepper
  • slices brioche bread
  • 2 slices deli ham
  • 3-4 slices American cheese (depending on the size of your bread cuz you want even coverage)
  • 1 tablespoon sriracha

Mediterranean

  • 1 can tuna, drained
  • 1 1/2 tablespoons mayo
  • tablespoon finely diced red onion
  • 1 tablespoon finely chopped Kalamata olives
  • 1-2 teaspoons capers
  • 1/8 teaspoon red pepper flakes
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon lemon juice
  • Kosher salt & coarse ground black pepper
  • 2 slices dark bread
  • 3 tablespoons softened butter
  • 3-4 slices Mozzarella cheese (depending on the size of your bread cuz you want even coverage)
  • Softened butter

Carnitas

  • Oil
  • Approximately 10 thin slices poblano pepper or regular green pepper will do (about an ounce)
  • Approximately 10 thin slices yellow onion (about an ounce)
  • 1 cup, about 3-4 ounces cooked pull pork or carnitas
  • 3-4 slices pepper jack cheese (depending on the size of your bread cuz you want even coverage)
  • 3 tablespoons mayo
  • 1 tablespoon garlic paste

Directions

Egg, Ham & Cheese

  1. Put egg, 1 tablespoon of the mayo, green onion and a pinch of salt & pepper in a small bowl, combine all by mashing together
  2. Build sandwich: bread, American cheese to cover, egg, ham, remaining cheese, bread
  3. Combine remaining mayo with sriracha in a small bowl, and spread evenly on the top bread
  4. Heat non-stick pan over medium, and grill sandwich mayo-side down
  5. When it's golden brown, spread remaining mayo on the top, flip over and cook until beautifully golden brown as well

Mediterranean

  1. Combine tuna, mayo, onion, olives, capers, red pepper, parsley, lemon juice and salt & pepper in a small bowl - mix well to combine
  2. Build sandwich: bread, Mozzarella cheese to cover, tuna mixture, remaining cheese, bread
  3. Spread butter evenly over the top and grill, butter-side down until golden brown
  4. Butter top, then flip and repeat

Carnitas

  1. Heat a little oil in a small pan, and add poblano & onion - cook over medium until softened and just beginning to brown, about 5 minutes - remove
  2. Add a little more oil, then the pork - flatten with a spatula and cook until brown and crispy (a couple of minutes) then flip and repeat
  3. Build sandwich: bread, pepper jack cheese to cover, onion/poblano mixture, crispy pork, remaining cheese, bread
  4. Combine mayo with garlic, mix well then spread evenly over the top and grill, mayo-side down over until golden brown
  5. Butter top, then flip and repeat
