I don’t have a video for this recipe.
If I had a photo, I would most certainly use it. That is... unless the photo I have sucks. For now, you'll just have to picture a big heaping helping of
Game Day Appetizers
...in your mind.

Makes enough for 10 people-ish

Ingredients

Meatballs

  • 2 pounds mini (1/2 ounce size) frozen meatballs, defrosted
  • Sesame oil
  • 1/4 cup hoisin sauce
  • 2 teaspoons soy sauce
  • 3 tablespoons Sambal chili sauce

Garlic Butter Wings

  • Neutral oil
  • 2 dozen party wings
  • Kosher salt & coarse ground black pepper
  • 1/2 cup butter
  • 3 tablespoons garlic paste, or 5 cloves garlic minced
  • 1/2 packet ranch seasoning

Bacon Quesadilla

Because tortilla sizes vary, the ingredients are here - just adjust to your tortilla

  • Tortillas
  • Shredded Monterey jack cheese
  • cooked, diced bacon
  • Potato chips

Baby Sausage Rolls

  • 1 package turkey or pork breakfast sausages (not the fully cooked kind)
  • 1 sheet puff pastry, defrosted
  • 1/2 cup steak sauce
  • 2 tablespoons apricot jam
  • Flour

Directions

Meatballs

  1. Drizzle meatballs with about a tablespoon of the sesame oil, then put on a medium high grill
  2. Cook, until nicely marked and heated all the way through
  3. While they cook, combine hoisin sauce, soy, chili sauce and another 1/2 teaspoon sesame oil in a small bowl - mix well and set aside
  4. When the meatballs are done, plate and serve with the sauce

Garlic Butter Wings

  1. Heat grill to medium high
  2. Drizzle wings with a little oil and season with salt & pepper (I forgot to in the video)
  3. Cook, until charred on both sides and cooked through
  4. While they cook, melt butter in a small pot and add the garlic - stir to combine
  5. When the wings are done, remove to a bowl, toss with some of the butter then dust with some of the ranch - mix well and serve

Bacon Quesadilla

  1. Build the quesadilla: bottom tortilla, cheese, bacon, chips, more cheese and finally top tortilla
  2. Cook on a flattop or large skillet, until beginning to brown on both sides and the cheese is melted
  3. Cut & serve - or was that obvious?

Baby Sausage Rolls

  1. Make a lengthwise slice in each sausage and remove casing
  2. Cut pastry sheets into 3 sections, and lay one section on a floured work surface
  3. Use rolling pin or bottle to make sheet section a little thinner and longer
  4. Place 3 sausages (without their casings) end to end on pastry sheet
  5. Roll sheet over sausages into a long snug tube, and cut off excess pastry
  6. Cut each tube into 8 pieces and place on lightly greased baking sheet (you can use parchment or wax paper instead if you like)
  7. Bake at 350 for 20-25 minutes until lightly brown
  8. Mix steak sauce and jam and use as dipping sauce
