If I had a photo, I would most certainly use it. That is... unless the photo I have sucks. For now, you'll just have to picture a big heaping helping of
1/2 teaspoon each kosher salt & coarse ground black pepper
1/2 teaspoon cumin
1/2 teaspoon chipotle chili powder
1/3 cup beef broth
1 cup loosely packed shredded cheddar cheese
1/3 cup sour cream
2 tablespoons green salsa
1/4 teaspoon chipotle chili powder
Juice of 1/2 lime
Flour Tortillas, 12 inch work nicely
Flour
Oil for frying
Directions
Heat a large pan medium, add a tablespoon of the oil and the onions – cook until nicely caramelized
Add the ground beef, breaking it up and cooking until no longer red, or pink, or rose – whichever uncooked beef color you choose to callit
Add the tomato paste, garlic, cumin and chili powder - stirring well to mix in
When it is, add the broth, and mix through well and cook until mostly evaporate – set aside to cool slightly
Heat and inch or so of oil in a large pan to 350
While you wait, combine sour cream, salsa, chili powder and lime juice – mix well and set aside
Combine flour with enough water to make a thick-ish paste
When the beef has cooled slightly, mix in the cheese, and roll up in the tortillas, stuffing extra beef into the ends, then use the flour paste like glue to seal up the last inch or so
Cook in the oil a couple minutes, turning until golden brown and crispy - remove, and let drain
