Crispy Beef Burrito

Crispy Beef Burrito

Makes 3 or 4

Ingredients

  • 1 yellow onion, finely diced
  • Neutral oil
  • 1 pound ground beef
  • 1 tablespoon tomato paste
  • 1 tablespoon garlic paste
  • 1/2 teaspoon each kosher salt & coarse ground black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chipotle chili powder
  • 1/3 cup beef broth
  • 1 cup loosely packed shredded cheddar cheese
  • 1/3 cup sour cream
  • 2 tablespoons green salsa
  • 1/4 teaspoon chipotle chili powder
  • Juice of 1/2 lime
  • Flour Tortillas, 12 inch work nicely
  • Flour
  • Oil for frying

Directions

  1. Heat a large pan medium, add a tablespoon of the oil and the onions – cook until nicely caramelized
  2. Add the ground beef, breaking it up and cooking until no longer red, or pink, or rose – whichever uncooked beef color you choose to callit
  3. Add the tomato paste, garlic, cumin and chili powder - stirring well to mix in
  4. When it is, add the broth, and mix through well and cook until mostly evaporate – set aside to cool slightly
  5. Heat and inch or so of oil in a large pan to 350
  6. While you wait, combine sour cream, salsa, chili powder and lime juice – mix well and set aside
  7. Combine flour with enough water to make a thick-ish paste
  8. When the beef has cooled slightly, mix in the cheese, and roll up in the tortillas, stuffing extra beef into the ends, then use the flour paste like glue to seal up the last inch or so
  9. Cook in the oil a couple minutes, turning until golden brown and crispy - remove, and let drain
  10. Serve with the sour cream business
