Chicago Tavern Pizza
Makes one 12" pizza

Ingredients
1/2 ball pizza dough, store bought or
recipe here
1/3 cup marinara, pizza sauce
1/4 cup fresh grated parmesan
1/2 cup shredded low moisture mozzarella
1/3 pound spicy Italian sausage
2 ounces sliced peperoncinis
2 ounces sliced roasted red peppers
2 tablespoons hot honey
Directions
Make the dough, put it into a bowl and let at room temperature about an hour - then put into a large zip lock bag and refrigerate, 24-48 hours
When ready to use, remove from fridge, separate into 2 balls, put each in a bowl, cover with cling film and let sit out 2 -3 hours
Preheat oven as hot as it will go, 500 to 550 degrees for 45 minutes (with a pizza stone if you have)
Roll out one ball to a 12 circle, and top with sauce, parmesan, mozzarella, the sauge into tiny balls, then the peperoncinis, and red peppers
Bake 1--12 minutes, remove and drizzle with honey
Slice & serve
