Chicago Tavern Pizza

Makes one 12" pizza

Ingredients

  • 1/2 ball pizza dough, store bought or recipe here
  • 1/3 cup marinara, pizza sauce
  • 1/4 cup fresh grated parmesan
  • 1/2 cup shredded low moisture mozzarella
  • 1/3 pound spicy Italian sausage
  • 2 ounces sliced peperoncinis
  • 2 ounces sliced roasted red peppers
  • 2 tablespoons hot honey

Directions

  1. Make the dough, put it into a bowl and let at room temperature about an hour - then put into a large zip lock bag and refrigerate, 24-48 hours
  2. When ready to use, remove from fridge, separate into 2 balls, put each in a bowl, cover with cling film and let sit out 2 -3 hours
  3. Preheat oven as hot as it will go, 500 to 550 degrees for 45 minutes (with a pizza stone if you have)
  4. Roll out one ball to a 12 circle, and top with sauce, parmesan, mozzarella, the sauge into tiny balls, then the peperoncinis, and red peppers
  5. Bake 1--12 minutes, remove and drizzle with honey
  6. Slice & serve
