CBR Foil Packets

Ah yes, the oh-so-delicious chicken bacon ranch combo - but in an easy to take & make foil packet. Perfect for camping, or even just to make ahead and throw on the grill or in the oven at home.

Makes 2

Ingredients

  • One 8 ounce boneless, skinless chicken breast
  • 1/2 large onion, any color will do cut into small pieces
  • 2 jalapenos, seeded, and cut into small pieces
  • 2 long red peppers, cut into small pieces
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cream cheese, broken into small clumps
  • 5 slices cooked bacon, crumbled
  • 1 clove garlic, minced
  • 2/3 - 1 ounce ranch seasoning powder
  • 1/2 teaspoon kosher salt
  • 2 tablespoon oil, or the leftover bacon grease plus oil to make a couple tablespoons

Directions

  1. Cut chicken into bite size pieces and put in a large bowl - add everything else and mix well
  2. Take about a 30" piece of foil, fold it in half, spray the top with non-stick spray and add half the mixture to the middle of it
  3. Fold up sides all the way around and seal well - you want the steam to stay in
  4. Heat grill to medium (or oven to about 325) and add the packets
  5. Cook until the chicken is approx 160 degrees, or about 20 minutes
  6. Remove, open carefully and have at it
