Carrot Ginger Dressing

Ingredients
Carrot Ginger Dressing
1/2 pound carrots, peeled
1 cup neutral oil, like avocado oil
1/4 cup chopped fresh ginger
1/2 cup rice vinegar
1/4 cup shallots, rough chopped
1/4 cup soy sauce
1 tablespoon sugar
3 tablespoons sesame oil
2 tablespoons lemon juice
Salt and fresh ground pepper to taste
Directions
Blanch carrots in boiling water for a minute, remove and immediately put in ice water for 3 minutes - drained & cut into 1/2 inch pieces
Put everything, including carrots into a blender, and mix on medium/high until it becomes a relatively smooth dressing
Store in fridge – but shake well before using
