Take chicken out of fridge 30 minutes before cooking
Lightly oil chicken, and season with cajun seasoning & smoked paprika
Heat a large cast iron pan to medium, add more oil and the chicken - cook, flipping every couple minutes until moderately blackened and about 160 degrees - remove
This is the perfect time to start cooking your spaghetti
Get pan back to medium and add butter and a tablespoon of oil, along with the peppers and onion, cook until just softened, about 5 minutes
Add the garlic and another tablespoon of the cajun seasoning - mix well, and when fragrant add the tomatoes and chicken broth - let cook 2-3 minutes
Add the cream and when warm add the cheese, stirring in until smooth
Now you can put in your spaghetti, being sure to mix so it's well coated - if you want it creamier, you could add more broth, cream or even pasta water
