Cajun Chicken Spaghetti

Cajun Chicken Spaghetti

Serves 4-6

Ingredients

  • 2 large boneless, skinless chicken breasts
  • Olive oil
  • Cajun seasoning, store bought or recipe here
  • 1 teaspoon smoked paprika
  • 1 tablespoon butter
  • 1 small onion, finely diced
  • 1 poblano pepper, finely diced
  • 1 small red bell pepper, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon smoked paprika
  • 1 - 14 ounce can fire-roasted tomatoes, drained
  • ½ cup chicken broth
  • 1 heavy cream
  • 3/4 cup shredded smoked gouda
  • 12 ounces spaghetti
  • ¼ cup diced green onions

Directions

  1. Take chicken out of fridge 30 minutes before cooking
  2. Lightly oil chicken, and season with cajun seasoning & smoked paprika
  3. Heat a large cast iron pan to medium, add more oil and the chicken - cook, flipping every couple minutes until moderately blackened and about 160 degrees - remove
  4. This is the perfect time to start cooking your spaghetti
  5. Get pan back to medium and add butter and a tablespoon of oil, along with the peppers and onion, cook until just softened, about 5 minutes
  6. Add the garlic and another tablespoon of the cajun seasoning - mix well, and when fragrant add the tomatoes and chicken broth - let cook 2-3 minutes
  7. Add the cream and when warm add the cheese, stirring in until smooth
  8. Now you can put in your spaghetti, being sure to mix so it's well coated - if you want it creamier, you could add more broth, cream or even pasta water
  9. Diced the chicken, mix in and voila - done
  10. Plate and top with green onions
