Buffalo Chicken Poutine
Only available at McDonalds in Quebec, Canada - until now cuz you can make it at home!
Approximately 24 ounces frozen French fries, cooked and crispy
Cheese curds, shredded Mozzarella will sub
Diced green onion
Directions
Put buttermilk, cholula and salt & pepper in a bowl, mix well and add tenders - make sure they're coated well and refrigerate an hour up to overnight
Combine flour, cornstarch and smoked paprika in a bowl, mix well and set aside
Make the buffalo sauce - melt the butter in a small pot and add the Franks, garlic powder, honey and cayenne - when melted and combined, set aside
Make the gravy - melt the butter in another small pot, mix in the flour and when smooth slowly start stirring in the broth
When all stirred in, add the onion & garlic powders, pinch of salt & pepper and the soy - stir until it's a smooth gravy - set aside
Heat oil to 375, remove chicken from buttermilk (shake off excess), put into the flour dredge (shake off excess) repeat and then gently slip into the oil
Cook until 165 degrees - repeat until all chicken is done and keep warm in a 200 degree oven
Ready to plate: put some fries in a bowl, top with cheese curds if using, then the warm up (hot gravy), then chop up a couple tenders, toss in the warmed up buffalo sauce, and put them on top
