One box Red Lobster Cheddar Bay Bisquit mix, lus 1/2 cup shredded cheddar and 1/4 cup butter
Directions
Preheat smoker to 350, put on brats about 30 minutes, or until 160 degrees - about 30 minutes (failing that, cook them anyway you like until done)
While they cook, heat a tablespoon of oil in a large oven proof pan over medium high heat, and add the onion and peppers - cook until softened, about 5 minutes
Stir in the garlic, and when fragrant add the spinach and mix until wilted, a teaspoon or so of the bbq seasoning, mix in well and set aside
Melt butter in a small pot and add flour - mix until smooth, then whisk in milk a little at a time until smooth and then the parmesan, set aside
When brats are ready, cut into bites size pieces, and add to the pan with the veggies and the cheese sauce - mix well
Preheat oven to 400
Make biscuits according to package directions using the shredded cheddar, and smooth over the top of the brat mixture
Bake until golden, 18-20 minutes, then remove and mix seasoning pack with 1/2 cup butter and brush over the top
