Best Roast Beef Dip, Ever?

Ingredients
Roast
1 tablespoon dried rosemary
1/2 tablespoon garlic powder
1/2 tablespoon onion powder
1 teaspoon kosher salt
1 teaspoon coarse ground black pepper
2 teaspoons soy sauce
2-3 tablespoons olive oil
One 2.5 to 3-pound Eye of Round roast
Dipping Jus
1 tablespoon butter
1 tablespoon olive oil
1/2 yellow onion, diced
2 cloves garlic, minced
3 cups beef stock
1 tablespoon Dijon mustard
2 tablespoons Worcestershire
1/2 teaspoon dried rosemary
1/2 teaspoon dried thyme
Kosher salt and coarse ground black pepper to taste
For the sandwich
Kaiser rolls
American cheese slices
Horseradish sauce
Preheat oven to 275 degrees
Combine all ingredients (except the roast) and stir in enough oil to make a thin-ish paste
Put roast on a rack covered baking sheet, and rub well all over with the mixture
Put into the oven and cook until an instant ready thermometer reads 125-130 degrees
Remove, and let cool - while it cooks, make the jus
Directions
Preheat oven to 275 degrees

Melt butter with oil in a medium pot, and add onion
When it softens and starts to caramelize a bit, add the garlic
Stir well and when fragrant, add remaining ingredients
Bring to a boil, then turn down and let simmer on low 20-30 minutes
When done, strain out the solids and set aside
Build the sandwich
Warm the jus
Slice roll in half, and spread horseradish sauce on the bottom bun
Slice roast super thin and make a nice pile of it
Put a slice of cheese in the middle of your pile, dip into the jus, and put on the bun
Top, and eat
