Dressing
- ⅓ cup olive oil
- 4 garlic cloves, minced finely
- 3 tablespoons chopped fresh cilantro
- 3 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh chives
- Zest and juice of 1 lemon
- 1 tablespoon honey, hot honey if you have it
- ½ teaspoon kosher salt
- ¼ teaspoon coarsely ground black pepper
Veggies
Use any you like, but these always work well. And whatever you use the goal is same size pieces for even cooking
- Small green or yellow zucchini, sliced into rounds
- Red onions, cut into 1-inch pieces
- Green, red, yellow or even orange bell peppers - a good mix is great cut into 1-inch pieces
- Pasillas or poblanos, cut into 1-inch pieces
- Mushrooms - I love them but find they often fall off a skewer
