Best Ever Veggie Skewers

Ingredients

Dressing

  • ⅓ cup olive oil
  • 4 garlic cloves, minced finely
  • 3 tablespoons chopped fresh cilantro
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • Zest and juice of 1 lemon
  • 1 tablespoon honey, hot honey if you have it
  • ½ teaspoon kosher salt
  • ¼ teaspoon coarsely ground black pepper

Veggies

Use any you like, but these always work well. And whatever you use the goal is same size pieces for even cooking  

  • Small green or yellow zucchini, sliced into rounds
  • Red onions, cut into 1-inch pieces
  • Green, red, yellow or even orange bell peppers - a good mix is great cut into 1-inch pieces
  • Pasillas or poblanos, cut into 1-inch pieces
  • Mushrooms - I love them but find they often fall off a skewer

Directions

  1. Soak your skewers, if wooden, in water about an hour before cooking
  2. Make the dressing: Combine the dressing ingredients in a small bowl, mix well, then set aside
  3. Skewer the veggies by alternating among the different colors, just like the pic
  4. When you're ready, preheat a grill to medium-high. Clean and oil the grill grates
  5. Give the skewers a light brushing of the dressing, and on they go
  6. Grill, turning often (watch for flare-ups because of the oil), until the veggies are softened and charred around the edges. Feel free to liberally brush with more dressing as you go
  7. And of course brush again with the dressing when you take them off.
