Best Ever Italian Burger Recipe – Prosciutto, Burrata, Pesto

This burger was created by Adrianna from Not Your Nonna's Sauce in San Diego for a burger competition - and won. I voted for it, and loved it so much I wanted to make it for our YouTube channel. Could you make it easier by buying pesto, and starting with already made marinara? Yes, and no one will be mad...as long as you make it.

Makes 3 Burgers

Ingredients

Arugula Pesto

  • 2 cups baby arugula
  • 1/2 cup Parmesan
  • 1/4 cup toasted pinenuts
  • Juice of 1/2 lemon
  • Kosher salt to taste
  • 1/2 cup olive oil

Marinara Jam

  • 15 ounces crushed tomatoes
  • 1/2 - 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon garlic paste
  • 1 tablespoon olive oil
  • Kosher salt & coarse ground pepper to taste
  • 1/2 cup granulated sugar

Burger

  • 3 slices prosciutto
  • 1 pound ground beef
  • Kosher salt & coarse ground black pepper
  • 1.5 cups arugula
  • 1 ball burrata cheese
  • 3 brioche buns

Directions

Arugula Pesto

  1. Put the arugula, Parmesan, pine nuts, garlic and lemon juice in a processor and pulse 30-45 seconds
  2. Turn the processor speed down, and while running slowly drizzle in the oil until blended, then taste, and add salt to your liking – refrigerate in an airtight container

Marinara Jam

  1. Put all ingredients in a small pot, bring to a boil, then turn down to a simmer, cover and leave alone 20-25 minutes until beautifully rich and thickened - set aside to cool

Burger

  1. Preheat oven to 350
  2. Put prosciutto between 2 racks, or pon parchment between 2 baking sheets, or just on parchment - they'll all work then just bake until crispy, about 20-25 minutes, until they begin to turn golden and shrivel a bit. Then let cool in the pan 10 minutes, cuz they'll continue to crisp
  3. Separate ground beef into 3 patties, season with salt & pepper and cook to your doness, grill, pan, whatever it's all good
  4. Toss arugula with about 1/2 teaspoon olive oil, season lightly with salt & pepper - and mix
  5. Toast buns, and you're ready to build: bottom bun, pesto, patty, marinara jam, arugula, some burrata, crispy prosciutto and finally the top bun with more pesto
