Barbacoa (Pressure Cooker)

Ingredients
3-4 pounds beef cheeks (or chuck roast) trimmed of silver-skin & extra fat (you should leave a little)
1 teaspoon each Kosher salt & ground pepper
1 teaspoon cumin
1 teaspoon oregano
2 large cloves of garlic, smashed
1 large bay leaf or 2 small
Juice of 2 limes
1 small bunch cilantro
1 tablespoon minced chipotle peppers
2 cups beef broth
For serving: tortillas, diced white onion, cilantro, lime wedges, tomatillo salsa

Directions
Put everything in a pressure cooker, put on lid and set on high for 50 minutes
When it;s done, let the steam release on it’s own
Remove, chop, serve, go to heaven then come back and have another one
