Baked Brie - 3 Ways

Ingredients

Cranberry & Pecan

  • 1 sheet puff pastry, thawed
  • One 8 ounce wheel Brie
  • 1 tablespoon hot honey
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1/2 teaspoon fresh thyme leaves
  • 1 egg, beaten
  • Baguette slices or crackers for serving

French Onion

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 small to medium sized yellow onion, sliced or diced into smallish pieces
  • 2 tablespoons white wine or vermouth
  • 1/2 cup beef broth
  • 1/4 teaspoon each kosher salt and coarse ground black pepper
  • 1/2 teaspoon fresh thyme leaves, plus a little more for serving
  • One 8 ounce wheel brie
  • 1/4 cup shredded Gruyere or swiss cheese
  • Baguette slices or crackers for serving

Bourbon & Brown Sugar

Feel free to use a round brie instead if you prefer

  • One wheel or wedge of brie
  • Brown sugar
  • Chopped pecans or walnuts
  • Bourbon
  • Butter

Directions

Cranberry & Pecan

  1. Preheat oven to 350
  2. Roll puff pastry out, just so it's about an inch wider and longer
  3. Place the unwrapped brie in the middle, spread honey over the surface, thenn top with the cranberries, pecans and finally the thyme leaves
  4. Fold one corner over the top and lightly brush with the egg, then fold over another corner onto the beaten egg and repeat until it's fully wrapped
  5. Brush all the pastry with egg, place on a parchment lined baking sheet and bake, 20-25 minutes or until golden brown - let cool for 5 minutes before serving

French Onion

  1. Melt olive oil with 1 tablespoon of the butter in a large skillet, and add the onion - cook over medium until beginning to caramelize, about 15 minutes
  2. Add the wine, mix well and allow to evaporate
  3. When it does add the beef broth, stir through the onions and let simmer on low, 5 minutes or so until evaporated
  4. Add remaining butter and 1/2 the thyme, mix in and remove from heat - let cool
  5. Put brie in a small baking dish or onto a parchment lined baking sheet, top with the onions, Gruyere and a sprinkling of thyme
  6. Bake 10-12 minutes or until soft in the middle

Bourbon & Brown Sugar

  1. Put brie on a parchment lined baking sheet
  2. Top with approx 1/8 inch brown sugar, then about the same of nuts
  3. Sprinkle with a little bourbon, not a lot - maybe a 1/2 teaspoon for the wedge
  4. Then dot the top with butter and bake 10-12 minutes or until soft in the middle
