Bagel Bacon Breakfast Casserole

The beautiful part of this (in addition to be delicious) is that you can make any modifications you want. Don't want the bacon, use more veggies or soy chorizo. Have some leftover chicken - put it in. No bagels but leftover croissants of sour dough bread - use it. It's all you sparky.

Ingredients

  • 1 pound bacon (the smokier the better) diced
  • 4 bagels, (I suggest everything bagels) ripped or cut into bite sized pieces
  • 1 tablespoon butter
  • 1 cup diced onion, any color or all colors
  • 8 large eggs
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 2 teaspoons kosher salt
  • 1 teaspoon coarse ground black pepper
  • 2 tablespoons sriracha or hot sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 6 ounces herbed cream cheese
  • 2 tablespoons sriracha
  • 1 cup shredded cheddar cheese
  • 1 cup Monterey Jack cheese

Directions

  1. Preheat oven to 350
  2. Cook (bacon in an oven proof pan) until just starting to get crispy, about 80% done - remove from pan
  3. Leave approx 3 tablespoons of the grease on the pan, put in the torn bagels and toss, stirring often until crispy on the edges - remove from the pan
  4. Add the butter, and when melted put in the onions and cooked until softened, 4-5 minutes - remove from heat
  5. While the onions cook, beat eggs in a large bowl and add everything else, except only 3/4 of each cheese, and then stir in the bagels and bagel and onions - mix well to combine
  6. Grease pan with some butter or non-stick spray, put in the mixture and top with remaining cheese
  7. Bake 20-25 minutes or until just set
  8. Serve
