Bacon Cheeseburger Meatloaf

Bacon Cheeseburger Meatloaf

Everything you love about a bacon cheeseburger - except in meatloaf form. Thank you @thepoof for today's viewer recipe.

Serves about 5-6

Ingredients

Meatloaf

  • 1/2 pound bacon, diced up
  • 1 medium onion, diced
  • 2 pounds ground beef
  • 2 eggs
  • 1/2 cup panko bread crumbs
  • 1/2 cup diced dill pickles
  • 3 tablespoons yellow mustard
  • 2 tablespoons mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon ground black pepper
  • 6 slices American cheese

Sauce

  • 1/3 cup western chili sauce, like Heinz
  • 1/2 cup apricot jam
  • 1 tablespoon tomato paste

Directions

  1. Cook bacon until just not quite getting crispy, remove to a paper towel lined plate to drain – put in a large bowl
  2. Cook onions in the same pan using a little of the bacon grease until nicely caramelized – add to the bacon
  3. Preheat oven to 350 degrees
  4. Put in remaining meatloaf ingredients, and mix really well to combine
  5. Spray a loaf pan with cooking spray, and add half the meatloaf mixture, pat down so it’s even, layer cheese on top then add remaining mix – flatten out and bake 45 minutes
  6. Combine the sauce ingredients with remaining tablespoon of mustard, and spoon over the top
  7. Bake an additional 15-20 or until 160 degrees
  8. Remove, let cool slightly before serving
