Best Pastrami Taco, Ever

Ingredients
1 red onion, thinly sliced
1/2 tablespoon oil
2 1/2 tablespoons butter
Kosher salt & fresh ground pepper
2 tablespoons prepared horseradish
2 tablespoons Dijon mustard
2 tablespoons Sour cream
1/3 pound sliced deli pastrami
1/3 cup monterey jack cheese, shredded
4 eggs
4 corn tortillas
1/3 cup French’s Fried Onions
Directions
Cook onions in oil and 1 tablespoon butter over medium heat until well softened and golden brown - season with salt & pepper and keep warm
Combine horseradish, Dijon and sour cream - mix well and set aside
Cook pastrami in 4 little piles in a non-stick pan until beginning to brown, flip over and add cheese - allow to melt
Cook eggs over easy with remaining butter in a non-stick pan and keep warm
Warm tortillas and build: tortilla, sauce, onions, pastrami with cheese, egg and finally fried onions
