I love this picture, in fact it's one of my favorites in the book. The colors, the textures, just everything. But here's the secret to it...all the meat was photographed on the floor of our foyer. We tried to use one of the background boards like we did for almost everything else, but none of them were right. Until a genius moment when we said "let's try the floor" - and it worked right away.
That's me & Lucas the photographer. I cleaned the floor before I put them down, we took the shots and then I vacuum sealed all of it and put it in my freezer. The lesson here is about improvisation - sometimes you just need to find a way to make it work.
Oh, and also don't be afraid of freezing meat, because it's all good as long as it's sealed properly. And that's where a vacuum sealer comes in, even an inexpensive one. Because it's the air that'll wreck frozen foods - not the cold.
